The EPA estimates restaurants discard 38 million tons of food annually, with 95% ending up in landfills. That waste doesn’t just disappear: it generates methane as it decomposes, a greenhouse gas 25 times more potent than carbon dioxide over a 100-year period. Composting is the intervention that stops that specific harm, but it works best as the final step in a waste reduction sequence, not the first.
New York City is now extending its composting mandate to smaller restaurants (under 6,000 square feet), which signals the direction of regulation in urban markets. Getting ahead of that mandate is worth doing before it becomes a compliance scramble.
Start With the Audit, Not the Bin
Before purchasing composting equipment or signing a pickup contract, conduct a waste audit. Sort and weigh one week of kitchen waste, categorized by type: prep waste, plate waste, overproduction, spoilage. The breakdown determines which composting approach makes sense.
If most of your organic waste comes from prep (vegetable trimmings, spent herbs, egg shells), an on-site composting system or a local pickup service can handle it efficiently. If most waste is cooked food from overproduction, the composting solution is less important than fixing the production planning.
The EPA’s guidance: an equal ratio of “browns” (carbon-rich materials like cardboard and paper) to “greens” (nitrogen-rich food scraps) is needed for effective breakdown. Most restaurant waste is predominantly “greens,” which is why partnering with a commercial composting facility, which can manage the ratio at scale, is typically more practical than on-site composting for food service operations.
Setting Up the Program
The infrastructure decisions are sequential: where compost bins go, what goes in them, and how waste is collected.
Placement matters more than most operators expect. Bins need to be at the point of waste generation, prep stations, dishwash areas, and server stations, not just at the back door. A bin that requires a separate trip is a bin that doesn’t get used consistently.
Staff education is the other determinant of success. Clear signage about what can and cannot be composted (no plastic, no grease-soaked paper, no meat in many residential programs), brief training on what goes where, and visible tracking of the program’s impact keep compliance rates up. Contaminated compost loads get rejected by commercial facilities: one episode of that breaks the program’s economics.
Renegotiating your waste hauling contract to include composting often reduces overall disposal costs. The Fryer Grease Opportunity
Used cooking oil is a separate composting-adjacent stream that many restaurants underutilize. Fryer grease can be collected and converted to biodiesel, a process handled by cooking oil collection services that typically operate at no cost to the restaurant, or pay a nominal fee per gallon. This diverts grease from drain disposal (which causes municipal infrastructure problems) while producing a renewable fuel.
The composting system and the fryer oil collection system together can significantly reduce the volume of material going to landfill from most restaurant kitchens, and both are operationally simple to set up through existing service providers in most metropolitan areas.
