The Audit Process
A professional water and energy assessment provides the most comprehensive baseline, but a basic internal audit — recording equipment runtime and estimated throughput for two weeks — is sufficient to prioritize interventions.
The assessment should cover: pre-rinse station usage (number of cycles and duration), ice machine fill cycles (ice machines are often significant water consumers and frequently overlooked), dishwasher cycles, cooking equipment (steamers, kettle braisers, pasta cookers), and restroom fixtures.
Cooking by steam is particularly water-intensive; using lids to trap heat and steam rather than open cooking reduces both water evaporation and energy usage simultaneously.
Water waste in restaurant kitchens is almost never intentional. It’s the result of defaults that were never questioned — spray valves, fill cycles, and service rituals that were set up when water cost a fraction of what it costs now.
Staff Engagement That Actually Works
Staff education on water conservation produces better outcomes when it’s specific rather than motivational. “Turn off the water between rinses” is more effective than “please conserve water.” Concrete instructions about what to do differently produce behavior change; appeals to environmental importance do not, consistently.
Incentive programs work when the incentive is directly connected to the measurable outcome. A simple monthly tracking chart showing the restaurant’s water consumption, posted in the kitchen, creates accountability without requiring a formal reward structure. Employees who can see the data are more likely to take the behavior seriously.
Washing vegetables in a bowl rather than under running water saves up to 20 liters per wash and produces better results for leafy greens and herbs than continuous rinsing. Training this as the standard kitchen technique — rather than as a conservation measure — gets better adoption.
